A Cake Recipe With Zucchini (Courgette) and Chocolate
Ingredients Needed:
Half C. to One C. chocolate chips
three courgettes, about 6 inches long, shredded (roughly two cups)
One teaspoon cinnamon
two 1/2 C. flour
3 eggs
Half C. butter
One t. vanilla essence
1/2 cup normal sugar
1 cup demerara sugar
1/2 cup healthy oil
1/2 cup buttermilk
four Tablespoon cocoa powder
1 tsp table salt
Two t. bread soda
Method:
Whilst you are preparing the ingredients, preheat oven to 160 degrees Celsius.
Grease a 9×13″ cake pan and put to one side.
Take a mixing bowl and mix the brown and white sugar, the butter and the oil.
Add eggs, the vanilla and the buttermilk and mix thoroughly.
Using a sieve, sieve the cocoa, flour, baking soda, cinnamon and salt together.
Add the powder mix to the wet mix and stir well
Mix in the shredded courgette and mix well.
Transfer the whole mix into the cake pan and sprinkle the top with chocolate chips.
Put the cake in the hot oven and cook for 45 mins.
Allow to cool, then turn out on wire rack.
